This book is a textbook and reference source on nutrition in health and disease. This ninth edition represents advances in knowledge since the eighth edition was published in 1994. The 115 individually authored chapters are grouped under six headings: Specific Dietary Components; Nutrition in Integrated Biologic Systems; Dietary and Nutritional Assessment of the Individual; Prevention and Management of Disease; Diet and Nutrition n Health of Populations; and Adequacy, Safety, and Oversight of the Food Supply. Six appendices include dietary reference recommendations from national and international agencies, nutrient and nonnutrient contents of foods and beverages, multiple anthropometric tables, several therapeutic diets and exchange lists, and sources of nutrition information, including on the Internet. The text is illustrated with tables and figures, including some color plates. This book should be a valuable tool for students, practitioners, and educators in the nutritional sciences, medicine, dentistry, dietetics, nursing, pharmacy, public health and all basic and applied biologic sciences. |
